This technique is essential because thalipeeth dough is made from gluten-free flours, which can't be rolled out like regular wheat-based doughs.

A Recipe Rooted in Tradition

Historically, thalipeeth was a clever way to clean out the larder before restocking for the year’s fresh harvest. Leftover lentils, grains, and legumes were roasted and ground into a flour mix, known as bhajani. This mix, rich in protein and fiber, forms the base of the thalipeeth dough.

Ingredients

  • 1 cup Home Kouzina Thalipeeth Bhajani
  • 1 medium spring onion or regular onions (½ cup), finely chopped
  • 2-3 green chilies, finely chopped
  • Fresh coriander, chopped
  • ½ tsp salt
  • ⅓ cup water (for kneading)
  • Peanut oil or ghee (for frying)

Serve with 

  • Butter 
  • Thecha or spicy shengdana chutney 
  • Dahi (Yogurt)


  • Prepare the Dough

    • In a mixing bowl, combine the thalipeeth bhajani, chopped onion, green chilies, coriander, and salt.
    • Gradually add water and knead into a soft, pliable dough.
    • Divide the dough into four equal-sized balls.
  • Shape the Thalipeeth

    • Heat a cast-iron tava (griddle) on medium heat.
    • Place a piece of parchment paper on your work surface.
    • Flatten one dough ball on the parchment, patting it gently into a disc about 5mm thick and 10–15 cm in diameter.
    • Create a small hole in the center of the disc using your finger.
  • Cook the Thalipeeth

    • Carefully transfer the dough disc along with the parchment onto the hot tava.
    • Peel off the parchment and set it aside for reuse.
    • Drizzle a little ghee or peanut oil around the edges and in the center of the thalipeeth.
    • Flip the thalipeeth and cook the other side until golden.
  • Serve

    • Serve hot with a dollop of fresh cream or butter, a side of spicy thecha, shengdana chutney, and some dahi (yogurt).
