Traditional Maharashtrian Thalipeeth
What is Thalipeeth?
Thalipeeth is a traditional flatbread from Maharashtra, known for its earthy, wholesome flavors and versatility. Its name comes from the method used to shape the dough: "thali" means plate, and "peeth" refers to flour, signifying the process of pressing the dough flat using your palm. This technique is essential because thalipeeth dough is made from gluten-free flours, which can't be rolled out like regular wheat-based doughs.
A Recipe Rooted in Tradition
Historically, thalipeeth was a clever way to clean out the larder before restocking for the year’s fresh harvest. Leftover lentils, grains, and legumes were roasted and ground into a flour mix, known as bhajani. This mix, rich in protein and fiber, forms the base of the thalipeeth dough.

"In some regions, thalipeeth is also called dhapata, a term that highlights the same "patting" technique used to shape the flatbreads."
