RECIPE
Experience the richness of Kashmiri cuisine with Home Chef Irfana Fazili’s award-winning Shahi Qorma Masala. Born from the cherished memory of her mother’s korma, this masala blends aromatic spices into a silky, regal base. Irfana’s culinary journey began with her father’s gentle encouragement and flourished into a flavourful tribute to her roots in Srinagar. The winner of Home Kouzina’s first-ever Family Recipe Contest, her Shahi Qorma Masala is a celebration of tradition, love, and the art of slow-cooked indulgence.
Ingredients
Cashews, Garlic, Fennel, Black Cardamom, Cinnamon, Red Chillies, Ginger, Green Cardamom, Clove
How to use
-
Classic Mutton or Chicken Qorma: Marinate your meat in curd, ginger-garlic paste, and this Shahi Qorma Masala. Slow-cook with browned onions and ghee for a rich, velvety curry perfect for festive dinners or family feasts.
-
Veg Qorma: Replace meat with paneer, soya chunks, or mushrooms. Simmer with the masala in a yoghurt-based gravy to create an aromatic and hearty vegetarian alternative that doesn’t compromise on flavour.
-
Qorma-Style Pulao: For a unique twist, mix leftover qorma gravy with cooked basmati rice and top with fried onions and nuts. A fragrant, one-pot meal that’s equal parts royal and comforting.
