Sambhar Powder: Chillies, Coriander, Chana Dal, Cinnamon, Cloves, Coconut, Fenugreek Seeds, Asafoetida (hing)

Chutney Pudi: Chana Dal, Urad Dal, Coconut, Chillies, Tamarind, Iodised Salt

Rasam Powder (Saaru Pudi): Chillies, Pepper, Coriander, Cumin, Fenugreek Seeds, Asafoetida
How to Use

Udupi Sambhar Powder:
Pressure cook toor dal with turmeric and cook vegetables like drumsticks or ash gourd in tamarind water with a pinch of jaggery. Add 1.5 tablespoons of sambhar powder, combine with mashed dal, and simmer until thick. Finish with a tempering of mustard seeds, hing, and curry leaves in coconut oil.

Udupi Chutney Pudi:
Mix 1–2 teaspoons of chutney pudi with sesame oil or ghee and serve as a dip with idli, dosa, or uttapam. It also makes a great topping for curd rice, ghee rice, or toast.

Udupi Rasam Powder (Saaru Pudi):
Simmer tamarind water with tomato, chilli, turmeric, jaggery, and salt. Add cooked toor dal, water, and 3 tsp rasam powder. Simmer briefly, temper with ghee, mustard seeds, curry leaves, and hing. Serve with rice or enjoy as a warm, peppery soup.
