Ingredients
Coriander (dhaniya), Chillies, Curry leaves, Fenugreek (methi), Fennel (saunf), Cumin ( jeera)
How to Use
To make an authentic Kerala-style sambar using Travancore Sambar Powder, start by cooking ½ cup of toor dal (arhar dal) until soft and mashing it well. In a pan, heat 1 tablespoon of coconut oil and temper ½ teaspoon of mustard seeds, a sprig of curry leaves, and 2 dried red chilies. Add 1 cup of chopped vegetables like drumsticks, brinjal, pumpkin, or carrots, and sauté for a few minutes. Stir in 1 to 2 tablespoons of Home Kouzina Travancore Sambar Powder, mix well, and let the spices coat the vegetables. Pour in 1 tablespoon of tamarind extract along with the cooked dal and about 1½ to 2 cups of water, then simmer until the flavors blend beautifully. Adjust salt as needed and finish with a garnish of fresh coriander.
Chef's tip : Serve hot with short grain rice (Kerala red rice), some papad and vegetable stir fry for a perfectly satisfying meal
