What is the difference between Pindi chhole masala and punjabi chhole masala. Which one is LESS spicy?

Home Kouzina

Great question!

Pindi Chhole Masala is darker, tangier, and more intense in flavor—thanks to ingredients like amchur, anardana, and sometimes even tea leaves used while boiling the chana. It’s less spicy in terms of chilli heat, but packs a bold, smoky punch. Typically served with bhature, kulche, its more of a street style food.

Punjabi Chhole Masala has a more balanced, masaledar profile with warming spices like cinnamon, black cardamom, and bay leaf. It’s usually a bit spicier, both in aroma and heat. Commonly paired with poori, roti, rice, or stuffed parathas in hearty North Indian meals. So if you're after something bold but not too hot, go with Pindi Chhole. For a spicier, more homestyle chana, Punjabi Chhole is your friend!
